Natural Fermented Beverage Standard (NFBS™) defines theconditions under which a beverage created through natural
fermentation may be considered biologically transformed,
structurally valid, and suitable for human consumption.
A natural fermented beverage is not an enriched liquid.
It is a new consumable system created through controlled biological
transformation.
A. Standard Abstract
NFBS™ establishes the core product conditions for beveragesproduced through natural fermentation.
It defines the minimum structural boundary between:
- naturally transformed beverages
- uncontrolled fermentation
- synthetic imitation
- non-fermented flavored liquids
valid, structurally controlled, and compositionally trustworthy.
C. Scope
This standard applies to:- fermented non-alcoholic beverages
- low-alcohol natural fermentation beverages
- plant-based fermentation liquids
- sugar-based fermentation systems
- live culture beverages
- synthetic beverages simulating fermentation
- chemically altered drinks outside natural fermentation
- products falsely presented as fermented without real
biological transformation

- fermentation is biologically real
- inputs are suitable for human consumption
- transformation occurs under controlled conditions
- no artificial process replaces fermentation identity
- output remains suitable for safe consumption
A beverage is NFBS™ invalid if:
- fermentation is simulated rather than biologically produced
- synthetic additives replace fermentation identity
- uncontrolled contamination affects product integrity
- the product is presented as fermented without valid
transformation - output stability or safety is not maintained
Occurs when:
- a product claims fermentation without real biological
transformation - fermentation identity is replaced by artificial flavoring or
chemical imitation - a product is marketed as natural while its defining
transformation is structurally false
