Canonical Definition
Kombucha is a fermented beverage module under the NaturalFermented Beverage Standard (NFBS™), produced through the
controlled fermentation of a tea-based liquid with a natural sugar
source using a symbiotic culture of bacteria and yeast (SCOBY),
resulting in a biologically transformed drink containing organic
acids and other fermentation-derived compounds.
Kombucha is valid only when its fermentation remains real,
controlled, and structurally consistent with the parent fermented
beverage standard.
Module Position
This module defines the product-specific conditions under whichkombucha may be considered a valid fermented beverage within the
OOF® framework.
It does not replace the parent standard.
It specifies how kombucha operates within it.
NFBS™ defines the category boundary.

Functional Basis
Properly prepared kombucha may contribute to:- digestive support through fermentation-derived acids
- a biologically active beverage profile

Minimum Implementation Framework (MIF)
Step 1 — Base PreparationUse:
- clean water
- tea suitable for fermentation
- natural sugar
- all inputs must be suitable for human consumption
- the base medium must be clean and stable
Introduce:
- a healthy SCOBY
- valid starter liquid or an equivalent fermentation-supporting
culture environment
- culture must be active
- no visible or known contamination may be present
Allow fermentation under stable conditions.
Minimum requirement:
- controlled time
- stable temperature
- protection from contamination
- no artificial process replacing fermentation
Monitor the fermentation process to preserve integrity.
Minimum requirement:
- no abnormal odor
- no visually unstable contamination
- fermentation develops within expected product behavior
- acidity development remains within a consumable range
The final product must remain:
- biologically transformed
- suitable for safe consumption
- structurally identifiable as kombucha
- not over-fermented beyond acceptable product integrity
