The Problem
The market is filled with products labeled as fermented.Yogurt, kefir, dairy drinks, and similar products are widely
presented as fermentation-based.
However, in many cases, fermentation is no longer the defining
process.
Instead:
- structure is created artificially
- taste is modified through additives
- consistency is controlled chemically
by fermentation.
Why This Matters
Without a clear definition:- quality becomes subjective
- consumers cannot distinguish real from simulated products
- producers can replace natural processes without transparency
- products become measurable
- classification becomes objective
- integrity becomes visible
