A. Standard Abstract
The Honey Integrity Standard (HIS) defines the structuralconditions under which honey preserves its natural composition,
biological activity, and origin authenticity throughout its
lifecycle.
The objective is to ensure that:
- honey remains 100% natural
- no substances are added or removed
- biological integrity is preserved
- processing does not degrade quality
- origin remains transparent and traceable
It defines integrity conditions of honey.
E. Structural Requirements
1. Composition IntegrityHoney MUST:
- consist of 100% honey
- contain no additives
- contain no external sugars or syrups
Honey MUST NOT:
- be diluted
- be mixed with water
- be mixed with syrups or external substances
Honey MUST NOT:
- be blended across unknown or mixed origins
- be labeled ambiguously (e.g. "EU / non-EU blend")
If honey is blended without full origin transparency:
→ it is not considered integrity-preserved honey
4. Thermal Integrity Requirement
Honey MUST NOT be exposed to temperatures that degrade its
natural biological structure.
This includes:
- enzyme degradation
- structural alteration
- loss of natural activity
Honey must remain in its natural biological state.
5. Processing Integrity
Allowed processing:
- natural settling
- minimal filtration
- mechanical separation
- excessive heating
- industrial processing altering structure
- chemical treatment
Honey MUST:
- be traceable to a defined origin
- clearly state source (region / beekeeper / batch)
- anonymous origin
- mixed-source without disclosure
Honey must preserve:
- natural enzymes
- biological activity
- structural composition
Processing must not convert honey into a biologically inactive
substance.
